Vegetarian/Vegan Diets
Carbohydrate loading should not be of major concern here as these foods are the core of their diet.
Proteins and therefore essential vitamins and minerals such as B-12, D, iron and zinc may be depleted. Plenty of soybean product, wheat germ, vegetable & cooking oils, fruits and dark leafy vegetables as well as the appropriate supplements will need to be the focus of these diets.
